Power Bars, dipped in chocolate for dessert. 2. Asian salad with ginger dressing. 3. Creamy coconut farro cereal with fresh mango and raspberries. 4. Minestrone soup with seasonal greens and avocado vinaigrette. 5. Falafel pita with creamy tahini dressing and tomato-cucumber herb salad. 6. Pineapple upside-down carrot cake cereal with coconut cream and toasted walnuts. 7. Open-face toasted “cheese” and roasted veggie flatbread and tomato soup. 8. Amaranth banana breakfast pudding parfait. 9. Hearty vegetable tortilla soup with avocado. 10. Vegetable ranchero tostadas with pinto beans, Fire-roasted ranchero sauce, cashew sour cream and avocado. #taketen #plantbased #soyumMy mind has been plant-based blown! I ate up (literally) the time to learn from plant-based chefs and all the crazy ways you can alter food and flavors. Here are a few of the recipes we tried and sometimes helped create (swipe for the pics): . . . 1. Steel-cut oats and quinoa cereal with caramelized apple and walnuts. 2. Greek chopped salads with roasted beets. 3. Roasted eggplant and kale lasagna. 4. Banana nut pancakes topped with blueberry sauce, whipped maple cream and berries. 5. Chickpea Waldorf Salad 6. Breakfast baked potato veggie scramble with cashew sour cream and spicy “sausage” patties. 7. Baked potato primavera with creamy vegetable gravy. 8. Salisbury-style lentil patties with homestyle mushroom gravy. 9. Sagey pecan meatballs with vegetable marinara pasta. 10. Soba noodle grain bowl with ponzu dressing. #taketen #plantbasedI recently returned from a delicious 10 days of learning, cooking, moving, hydrating, disconnecting and rejuvenating in the Napa Valley. I made a new little family with lovely people from around the world, and we spent the week wandering beaches and forests, swimming in a mineral pool, biking through Calistoga vineyards and connecting with strangers in a way none of us expected. I’m thankful for time to focus and recalibrate spiritually, mentally and physically and to remember what’s most important.
